Ingredients

  • Large egg whites, separated and at room temperature
  • Granulated sugar (e.g., Domino brand)
  • Cream of tartar
  • Pure vanilla extract
  • Mini chocolate chips (semi-sweet or milk)
  • Optional: White food coloring gel

Instructions

  1. Preheat oven to the lowest setting (175°F-200°F / 80°C-95°C). Line two baking sheets with parchment paper.
  2. Ensure mixing bowl and beaters are completely clean and grease-free.
  3. Place egg whites and cream of tartar in the bowl. Beat on medium-high speed until foamy and opaque (soft peaks).
  4. With mixer running on medium speed, slowly stream in granulated sugar. Continue beating for 5-7 minutes until stiff, glossy peaks form and sugar is fully dissolved (no grittiness).
  5. Turn off mixer and gently fold in vanilla extract with a rubber spatula.
  6. Pipe meringue into ghost shapes (round base with a smaller mound on top) or spoon into cloud shapes onto prepared sheets.
  7. While meringues are still warm, press two mini chocolate chips onto each to form eyes.
  8. Bake for 1 to 1.5 hours with the oven door propped open slightly to allow moisture to escape.
  9. Cookies are done when dry to the touch and lift easily off parchment.
  10. Turn off oven and leave cookies inside with door propped open for another 30 minutes to cool completely.

Ensure egg whites are room temperature and free of any yolk. Sugar must be fully dissolved to avoid grittiness. Humidity can affect crispness; store in airtight containers with silica gel or bread if needed. For dairy-free, ensure chocolate chips are dairy-free.
