  • 8 ounces cream cheese, softened to room temperature
  • 1 cup canned pumpkin puree
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • Whipped cream, for topping (optional)
  • Extra crushed gingersnaps, for garnish (optional)
  • Toasted pumpkin seeds, for garnish (optional)

Instructions

  1. Preheat oven to 325°F (165°C) and line a mini muffin tin with cupcake liners.
  2. Pulse gingersnap cookies in a food processor until fine crumbs form. Mix crumbs with melted butter and 1 tablespoon sugar.
  3. Divide crumb mixture among liners and press firmly into the bottom and slightly up the sides.
  4. Beat softened cream cheese with granulated sugar and brown sugar until completely smooth.
  5. Add eggs one at a time, mixing on low speed just until incorporated. Mix in vanilla extract and salt.
  6. Add pumpkin puree and pumpkin pie spice, mixing on low until just combined.
  7. Spoon filling into crust-lined cups, filling almost to the top.
  8. Bake for 18-22 minutes until edges are set but centers still have a slight jiggle.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Refrigerate for at least 2 hours or overnight before serving with optional toppings.

Notes

Ensure cream cheese and eggs are at room temperature to avoid lumps. Do not overmix the batter once eggs are added to prevent cracks. The centers should still jiggle slightly when removed from the oven; they will firm up as they cool. For best texture, chill overnight.
