A simple yet elegant fall side dish featuring acorn squash roasted until tender and caramelized, then drizzled with a rich, nutty brown butter and maple syrup glaze.

  • 2 medium acorn squash
  • 1 stick (1/2 cup or 113g) unsalted butter
  • 2 tablespoons pure maple syrup
  • 1 tablespoon extra virgin olive oil
  • Kosher salt, to taste
  • 1/2 teaspoon freshly cracked black pepper
  • Optional: Fresh sage leaves or chopped pecans

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or grease lightly.
  2. Wash the acorn squash and carefully slice it in half from stem to base. Scoop out seeds and pulp with a spoon.
  3. Place squash halves cut-side up on the baking sheet. Sprinkle inside with salt and pepper, and drizzle with olive oil.
  4. In a small saucepan over medium heat, melt the butter. Stir constantly with a whisk until it foams, then subsides, and turns golden brown with a nutty aroma (4-6 minutes). Remove from heat immediately.
  5. Stir the maple syrup into the hot brown butter. Be careful as it will bubble.
  6. Brush or spoon the brown butter mixture over the cut sides of the squash.
  7. Roast for 30-40 minutes, or until a fork easily pierces the flesh to the skin and edges are caramelized.
  8. Remove from oven and let cool for 5 minutes before serving.

Notes

Ensure the squash halves are not touching on the pan to allow for proper caramelization rather than steaming. If the edges brown too quickly, cover loosely with foil. For dairy-free, substitute butter with ghee or plant-based butter.
