Ingredients

Scale
  • 1 large head of cauliflower, cut into bite-sized florets (about 4 cups)
  • 1 cup all-purpose flour (or gluten-free flour blend for GF option)
  • 1 cup water (room temperature)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon baking powder
  • 1 cup buffalo sauce (e.g., Frank’s RedHot)
  • 2 tablespoons melted unsalted butter (optional)
  • ½ cup sour cream
  • ½ cup mayonnaise (light mayo optional)
  • ½ cup crumbled blue cheese
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh chives or parsley, finely chopped (optional, for garnish)

Instructions

  1. Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone mat. Place a wire rack on the sheet if available.
  2. In a large bowl, whisk together flour, garlic powder, smoked paprika, salt, black pepper, and baking powder. Slowly add water, whisking until smooth and pourable but thick enough to coat cauliflower.
  3. Dip each cauliflower floret into the batter, coating fully. Let excess drip off and place on the prepared baking sheet or wire rack in a single layer.
  4. Bake for 20-25 minutes, flipping each piece carefully around the 15-minute mark until golden and crispy.
  5. While baking, mix buffalo sauce with melted butter in a bowl.
  6. Toss baked cauliflower in the buffalo sauce mixture gently to coat evenly.
  7. Return coated cauliflower to the baking sheet and bake for an additional 5-7 minutes to caramelize the sauce.
  8. Prepare the blue cheese dip by mixing sour cream, mayonnaise, blue cheese, lemon juice, Worcestershire sauce, salt, and pepper. Chill until serving.
  9. Serve the buffalo cauliflower bites warm with the blue cheese dip garnished with chopped chives or parsley.

Notes

Do not overcrowd the baking sheet to ensure crispiness; bake in batches if needed. Using a wire rack helps air circulate and keeps bites crispy. Toss gently in buffalo sauce to preserve the crispy coating. Let the blue cheese dip chill at least 15 minutes for best flavor. Reheat leftovers in the oven to maintain crispness; avoid microwaving.
