  • 1/4 cup onion, finely diced (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional garnish: fresh cilantro, diced jalapeños, or sour cream

Instructions

  1. Prep the ingredients: Rinse and drain the black beans thoroughly. Mince the chipotle peppers and garlic. Dice the onion if using. Soften the cream cheese by microwaving for 15-20 seconds or leaving it out for 30 minutes.
  2. Combine the base: In a medium microwave-safe bowl, mix the softened cream cheese, shredded cheddar, black beans, chipotle peppers, garlic, onion (if using), cumin, chili powder, salt, and pepper. Whisk or stir until the cream cheese is fully incorporated and smooth.
  3. Heat the dip: Microwave on high for 1 minute. Remove and stir well. Check consistency; if too thick, add a splash of milk or water. If too thin, microwave for another 30 seconds. Ensure the cheese is fully melted and smooth.
  4. Final adjustments: Taste the dip and add more salt, pepper, or adobo sauce for heat if desired. Remember that the heat may build as it cools.
  5. Serve: Transfer to a serving bowl (preferably dark or cauldron-shaped). Garnish with cilantro or sour cream if desired. Serve immediately with tortilla chips, pita chips, or vegetable sticks.
