  • 2 pounds ground beef (80/20)
  • 2 chipotle peppers in adobo sauce, finely chopped

  • 1 can (14.5 ounces) fire-roasted diced tomatoes, undrained
  • 1 can (15 ounces) tomato sauce
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup beef broth, low-sodium
  • 1 tablespoon brown sugar
  • Optional toppings: shredded cheddar, sour cream, diced avocado, fresh cilantro, lime wedges, sliced jalapeños

Instructions

  1. Heat the oil: Place your Dutch oven over medium-high heat. Add the olive oil and let it shimmer for about 30 seconds.
  2. Sauté the aromatics: Add the diced onion and cook for 4 to 5 minutes, stirring occasionally, until translucent and starting to brown.
  3. Add the garlic: Toss in the minced garlic and cook for 30 seconds, just until fragrant.
  4. Brown the beef: Add the ground beef to the pot. Break it up and let it cook undisturbed for 2 to 3 minutes to get a sear, then stir and cook until no pink remains, about 5 to 6 minutes. Drain excess fat if desired.
  5. Bloom the spices: Sprinkle cumin, smoked paprika, oregano, salt, and pepper over the meat. Stir and cook for 1 minute.
  6. Add the chipotles and adobo: Stir in the chopped chipotle peppers and adobo sauce. Cook for 1 minute.
  7. Pour in the tomatoes: Add fire-roasted diced tomatoes (with juices) and tomato sauce. Stir, scraping up any browned bits from the bottom.
  8. Add beans and broth: Stir in drained black beans, pinto beans, beef broth, and brown sugar.
  9. Bring to a boil, then simmer: Increase heat to high and bring to a gentle boil. Reduce heat to low, cover partially, and simmer for 25 to 30 minutes, stirring occasionally.
  10. Taste and adjust: After 25 minutes, taste and adjust seasoning—add more chipotle, salt, or smoked paprika as needed.
  11. Rest before serving: Remove from heat and let chili sit for 5 to 10 minutes before serving.

For best flavor, make this chili a day ahead and reheat. Chipotles vary in heat; start with two and adjust. Toast cumin in a dry skillet for 30 seconds for extra aroma. Rinse beans to remove excess sodium and starch. Let chili rest before serving to allow flavors to meld.
