  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 8 slices thick-cut bacon, chopped
  • 1 cup (100 g) sharp cheddar cheese, shredded
  • 1/4 cup (25 g) breadcrumbs (optional)
  • 1/4 cup (60 ml) ketchup
  • 2 tbsp (30 ml) yellow mustard
  • 2 tbsp (25 g) brown sugar
  • 1 tbsp Worcestershire sauce
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat your skillet over medium heat and cook the chopped bacon until golden and crispy, about 8 minutes. Transfer bacon to a paper towel-lined plate to drain excess grease, leaving about 1 tablespoon of bacon fat in the pan.
  3. In the same skillet with reserved bacon fat, add diced onion and cook over medium heat for 4-5 minutes until softened and translucent. Add minced garlic and sauté for another minute until fragrant.
  4. In a large mixing bowl, combine ketchup, yellow mustard, brown sugar, Worcestershire sauce, salt, and pepper. Stir until smooth.
  5. Drain one can of beans slightly if too liquidy, then add all the beans, cooked onion, and garlic to the sauce bowl. Stir gently to coat beans evenly without mashing.
  6. Reserve about 1/4 cup of crispy bacon for topping, then fold the rest into the bean mixture.
  7. Pour the bean mixture into a greased 8×8 inch baking dish. Sprinkle shredded cheddar evenly over the top, followed by reserved bacon bits and breadcrumbs if using.
  8. Bake uncovered for 30-35 minutes, until cheese is melted and bubbly and breadcrumbs are golden brown.
  9. Let the casserole rest for 5 minutes before serving.

Notes

If top browns too quickly, tent loosely with foil halfway through baking. Avoid stirring casserole while baking to keep layers intact. For leaner option, use turkey bacon; for dairy-free, substitute vegan cheese. Breadcrumbs are optional and can be replaced with gluten-free crumbs for gluten-free diet. Adding smoked paprika or liquid smoke to sauce enhances smoky flavor.
