Ingredients

Scale
  • 34 pounds beef brisket point cut (fatty part for best burnt ends)
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon kosher salt or sea salt
  • 1 teaspoon chili powder (optional)
  • 1 tablespoon olive oil or avocado oil
  • 1 cup sugar-free tomato ketchup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon liquid smoke (optional)
  • 12 tablespoons erythritol or preferred keto-friendly sweetener
  • Salt and pepper to taste

Instructions

  1. Trim and cube the brisket: Remove thick fat cap but leave some marbling. Cut into 1½-inch cubes.
  2. Prepare the dry rub: Mix smoked paprika, garlic powder, onion powder, black pepper, salt, chili powder, and olive oil into a paste.
  3. Coat the brisket cubes with the rub and let sit at room temperature for 30 minutes.
  4. Preheat smoker or grill to 225°F using hardwoods like hickory or oak.
  5. Smoke the brisket cubes for 2-3 hours until internal temperature reaches 165°F and bark is firm.
  6. Make the sugar-free BBQ sauce by whisking all sauce ingredients in a saucepan over low heat and simmering for 5-7 minutes.
  7. Toss smoked brisket cubes in BBQ sauce and place in a foil pan. Cover tightly with foil.
  8. Return pan to smoker or grill at 225°F and cook for 1 to 1.5 hours until tender and caramelized. Unwrap for last 15 minutes for thicker sauce if desired.
  9. Remove from heat and let rest covered for 10 minutes before serving.

Notes

Maintain a steady smoker temperature of 225°F for best results. Use hickory or oak wood for authentic BBQ flavor. Spritz brisket with apple cider vinegar or water every 45 minutes if it seems dry. Resting the burnt ends for 10 minutes after cooking is critical for juicy texture. If no smoker is available, use a charcoal grill with indirect heat or oven method with liquid smoke.
