Refreshing Watermelon Vodka Slushies

A quick, easy, and refreshing summer drink made with watermelon, vodka, lime juice, and a touch of sweetness, served in a carved watermelon bowl for a fun presentation.

  • 4 cups watermelon, cubed and chilled
  • 1 cup (240 ml) vodka
  • 2 tablespoons fresh lime juice (about 1 large lime)
  • 2 tablespoons simple syrup or honey (adjust based on sweetness)
  • 2 cups ice cubes, crushed or whole
  • A handful fresh mint leaves (optional, for garnish)
  • Pinch of salt (optional)

Instructions

  1. Cut the watermelon in half horizontally. Use a sharp knife to carefully carve out the flesh, leaving about a 1-inch thick shell to hold the slushie. Save the watermelon chunks for blending.
  2. Cut the scooped-out watermelon flesh into roughly 1-inch cubes. Chill in the fridge for at least 30 minutes if possible.
  3. If making simple syrup, dissolve equal parts sugar and water over low heat until clear. Cool before using. This step is optional if using honey or no sweetener.
  4. In a blender, combine 4 cups chilled watermelon cubes, 1 cup vodka, 2 tablespoons lime juice, 2 tablespoons simple syrup or honey, and 2 cups crushed ice. Pulse on medium-high for about 30 seconds, then blend continuously until slushy (20-30 seconds). Adjust thickness by adding water or more ice as needed.
  5. Taste and adjust sweetness, lime, or salt as desired. Blend briefly again if adjustments are made.
  6. Pour the slushies into the carved watermelon bowl. Garnish with fresh mint leaves and lime wedges. Serve immediately with straws.

Notes

Chill watermelon cubes and vodka before blending for best slushy texture. Pulse ice in blender to avoid overheating. Serve immediately for best texture or freeze leftover slushie mixture and scrape before serving. Non-alcoholic version: omit vodka and add sparkling water or lemon-lime soda.
