  • 6 large fresh lemons, juiced (about 1 cup/240ml lemon juice)
  • 4 cups (600g) frozen raspberries
  • 3/4 cup (150g) granulated sugar
  • 4 cups (960ml) cold water
  • 2 cups (480ml) ice cubes
  • Fresh mint leaves (optional, handful)

Instructions

  1. Roll each lemon on the counter to loosen the juice, then cut in half and juice until you have about 1 cup (240ml) of fresh lemon juice. Remove any seeds. This should take about 5 minutes.
  2. In a small saucepan, combine the granulated sugar with 1 cup (240ml) of water. Heat gently over medium heat, stirring until sugar dissolves completely. Let it cool to room temperature (about 10 minutes).
  3. In your blender, add the frozen raspberries, fresh lemon juice, cooled simple syrup, remaining 3 cups (720ml) of cold water, and ice cubes. Blend on high for 1 to 2 minutes until smooth and slushy. Adjust consistency by adding more water or ice cubes as needed.
  4. Taste and adjust sweetness or tartness by adding more simple syrup or lemon juice as desired.
  5. Pour the slushy into a large pitcher. Stir in fresh mint leaves if using. Serve immediately with straws or spoons.

Notes

Use frozen raspberries straight from the freezer to avoid watery slushy. Prepare simple syrup ahead to save time. Blend just until smooth and icy to prevent melting. Chill the pitcher before serving to keep the drink cold longer. For a boozy version, add 1 cup vodka or gin after blending.
