Refreshing Firecracker Popsicles

Creamy coconut milk popsicles with mixed berries create a refreshing, tangy summer treat that’s quick and easy to make.

Ingredients

  • 1 can (13.5 oz / 400 ml) full-fat coconut milk
  • 2 cups (300 g) mixed berries (strawberries, blueberries, raspberries, or blackberries), frozen or fresh
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon fresh lime juice
  • 1 teaspoon vanilla extract (optional)
  • Pinch of sea salt

Instructions

  1. In a blender, pulse about 1 cup (150 g) of mixed berries until roughly pureed but still a bit chunky. Set aside.
  2. Rinse the blender and add the full can of coconut milk (shake well before opening). Add honey or maple syrup, lime juice, vanilla extract, and a pinch of sea salt. Blend for 30 seconds until smooth and creamy. Taste and adjust sweetness if needed.
  3. Pour a few tablespoons of the coconut mixture into each popsicle mold, then spoon a layer of the berry puree on top. Repeat layering until molds are full, leaving a little room at the top for expansion.
  4. Using a skewer or the tip of a knife, swirl the layers lightly to create a marbled firecracker effect. Do not overmix.
  5. Insert sticks into molds and freeze for at least 6 hours or overnight. Avoid moving molds during the first hour to keep layers neat.
  6. To unmold, run warm water on the outside of the molds for 10-15 seconds, then gently pull out the popsicles and enjoy.

Notes

Let frozen berries sit at room temperature for 5-10 minutes before blending to avoid icy chunks. Use a gentle hand when swirling layers to maintain the marbled effect. Adjust sweetness to taste as coconut milk varies in sweetness. For easier unmolding, run warm water briefly over molds. Variations include using coconut yogurt for a tangier base, swapping berries for tropical fruits, or adding ginger or chili powder for a kick.
