Quick 20-Minute Ground Beef and Rice Skillet

A fast, one-pot comfort food meal featuring seasoned ground beef and fluffy long-grain white rice cooked together in a skillet with savory broth and tomato sauce.

  • 1 lb ground beef (80/20 lean-to-fat ratio preferred)
  • 1 cup long-grain white rice
  • 2 cups low-sodium beef broth
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 1 tablespoon vegetable oil, olive oil, or butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme

Instructions

  1. Dice the onion and mince the garlic. Measure out the rice, broth, and tomato sauce.
  2. Heat the oil in a large 12-inch skillet over medium-high heat. Add the ground beef and break it up with a wooden spoon. Cook until no pink remains, about 5 minutes. Stir in the diced onion and cook for 2 minutes until softened.
  3. Add the minced garlic, paprika, thyme, salt, and pepper. Stir constantly for about 60 seconds until fragrant.
  4. Pour in the beef broth and tomato sauce. Stir to scrape up any browned bits from the bottom of the pan. Add the uncooked rice and stir well to combine.
  5. Bring the mixture to a boil. Once boiling, reduce heat to low, cover with a tight-fitting lid, and simmer for 10 minutes without lifting the lid.
  6. Check if rice is tender and liquid is absorbed. If needed, cover and cook for 2 more minutes. Remove from heat and let sit, covered, for 5 minutes.
  7. Fluff the rice with a fork before serving.

Notes

Do not lift the lid during simmering to retain steam. Do not stir the rice while it is cooking to prevent gumminess. If using brown rice, increase liquid to 2.5 cups and cook for 20-25 minutes. For a creamy version, stir in 1/2 cup shredded cheddar cheese after removing from heat.
