A quick and easy fall brunch cocktail that tastes like autumn in a glass, featuring a cinnamon-sugar rim, crisp apple cider, and dry sparkling wine. It’s the perfect balance of sweet and tart, with warm spices that make every sip feel like a cozy sweater.

  • Apple cider (not apple juice), chilled
  • Prosecco or Champagne (dry), chilled
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • Apple slices (Honeycrisp or Fuji), for garnish
  • Cinnamon sticks, optional for garnish
  • Optional: tiny pinch of nutmeg or allspice for the rim

Instructions

  1. In a small shallow dish, mix together 2 tablespoons of granulated sugar with 1 teaspoon of ground cinnamon until evenly distributed.
  2. Moisten the rim of each champagne flute or wine glass by running an apple slice around the edge or using a pastry brush dipped in apple cider.
  3. Dip each moistened rim into the cinnamon-sugar mixture, twisting slightly to coat evenly. Tap off any excess and let sit for a minute.
  4. Fill each glass about one-third full with apple cider (approximately 2 to 3 ounces).
  5. Slowly pour chilled Prosecco or Champagne over the cider, filling the glass to about three-quarters full. Pour gently to preserve bubbles.
  6. Garnish each glass with a thin apple slice on the rim and a cinnamon stick if desired.
  7. Serve immediately.

Notes

Chill all ingredients thoroughly before assembling. The cinnamon-sugar rim is essential for the signature flavor. For a non-alcoholic version, substitute sparkling apple cider or non-alcoholic sparkling wine. Prep rimmed glasses up to an hour ahead for easy entertaining.
