  • 2 tablespoons granulated sugar
  • 2 tablespoons light brown sugar, packed
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • ¼ cup plus 1 tablespoon all-purpose flour (about 42 grams)
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup semi-sweet chocolate chips, plus extra for topping
  • Vanilla ice cream and caramel sauce for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a small oven-safe skillet (5-6 inches) with butter.
  2. Melt 3 tablespoons of unsalted butter in a microwave-safe bowl in 20-second bursts. Let cool for 1 minute.
  3. Add 2 tablespoons granulated sugar and 2 tablespoons packed light brown sugar to the melted butter. Whisk until combined.
  4. Add 1 large egg yolk and ½ teaspoon vanilla extract. Whisk vigorously for about 30 seconds until lighter in color and slightly thicker.
  5. In a separate small bowl, whisk together ¼ cup plus 1 tablespoon all-purpose flour, ¼ teaspoon baking soda, and ¼ teaspoon salt.
  6. Pour the dry ingredients into the wet mixture. Stir with a spatula just until no streaks of flour remain. Do not overmix.
  7. Fold in ¼ cup semi-sweet chocolate chips. Reserve a few chips to press on top.
  8. Scrape the batter into the prepared skillet. Press into an even layer about ½ inch thick. Press reserved chocolate chips on top.
  9. Bake for 10 to 12 minutes. The edges should be golden and set, the center slightly underdone and puffy.
  10. Cool on a wire rack for 3 to 5 minutes. Top with vanilla ice cream and caramel sauce if desired. Serve with two spoons.

Notes

Don’t overbake; the center should look slightly underdone when removed from the oven. Let the skillet rest for 3-5 minutes before serving. For best results, use room temperature egg yolk and properly measured flour.
