  • 1 pound red seedless grapes (stems on)
  • 1 cup champagne or dry sparkling wine
  • A few fresh mint leaves (optional)
  • 8 oz aged gouda
  • 8 oz brie or camembert
  • 4 oz sharp cheddar cubes
  • 1 package water crackers
  • 1 loaf baguette, sliced
  • 1 package walnut or pecan crackers
  • 1/2 cup mixed nuts (walnuts, almonds, or pistachios)
  • 1/2 cup dried apricots or figs
  • 1/4 cup honey or fig jam
  • Fresh rosemary sprigs
  • Olive oil (for toasting baguette)

Instructions

  1. Wash and pat dry the grapes. Place them in a large bowl and pour the champagne over them, ensuring they are mostly submerged.
  2. Cover the bowl and refrigerate the grapes for at least 1 hour, or overnight for maximum flavor.
  3. Slice the baguette into thin rounds, brush lightly with olive oil, and toast in an oven at 375°F for 3-4 minutes. Let cool completely.
  4. Take cheeses out of the fridge 30 minutes before serving to bring to room temperature. Slice gouda into triangles/cubes and cut cheddar into small cubes. Leave brie whole or cut into wedges.
  5. Arrange small bowls of jam and nuts on a large serving board.
  6. Place cheese wedges and blocks on the board, spreading them out evenly.
  7. Fan out water crackers and place toasted baguette slices nearby. Add nutty crackers in a separate pile.
  8. Fill gaps with dried apricots, figs, and mixed nuts. Tuck fresh rosemary sprigs around the edges for garnish.
  9. Remove grapes from the champagne liquid and let them drain for a minute before placing them in empty spaces on the board.
  10. Drizzle honey over the brie if desired. Serve immediately.

Notes

Let the grapes soak for at least an hour, but overnight is best. Ensure cheese is at room temperature for best flavor. Do not overcrowd the board; leave negative space for elegance. Add grapes last to prevent crackers from getting soggy. Store leftovers separately: cheese in fridge, crackers in airtight container, and consume grapes within 24 hours.
