  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter, softened
  • Zest of 1 large lemon
  • Juice of half a lemon
  • 2 tablespoons fresh dill, finely chopped
  • 1 small garlic clove, minced (optional)
  • Pinch of salt and black pepper

Instructions

  1. Pat the salmon fillets dry with paper towels to remove excess moisture. Brush both sides lightly with olive oil and season generously with salt and pepper.
  2. In a small bowl, combine softened butter, lemon zest, lemon juice, chopped dill, minced garlic, salt, and pepper. Mix until well incorporated. Set aside at room temperature.
  3. Preheat the grill to medium-high (about 400Β°F / 200Β°C). Clean the grates and lightly oil them to prevent sticking.
  4. Place the salmon skin-side down on the grill. Cook for about 6-7 minutes without moving it to develop a crisp skin.
  5. Flip carefully using a fish spatula and grill for an additional 2-3 minutes, depending on thickness, until salmon flakes easily but remains moist.
  6. Transfer the salmon to a serving platter and spoon a generous dollop of the lemon dill butter over each fillet while hot, letting it melt.

Notes

Pat salmon dry before grilling for a good sear. Let the skin crisp fully before flipping to avoid tearing. Keep butter at room temperature for smooth sauce blending. Use indirect heat on charcoal grills after searing to prevent flare-ups. The lemon dill butter sauce can be made ahead and stored in the fridge; bring to room temperature before serving.
