  • 1 tbsp pure vanilla extract
  • 1 cup (240ml) buttermilk, room temperature (or whole milk with 1 tbsp lemon juice)
  • 1 ½ cups (340g) unsalted butter, softened (for buttercream)
  • 5 cups (600g) powdered sugar, sifted
  • 23 tbsp heavy cream or milk
  • 1 tsp vanilla extract (for buttercream)
  • 1 ½ tsp culinary lavender buds, finely ground (or 1 tsp lavender extract)
  • Natural purple gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
  2. In a medium bowl, whisk together sifted flour, baking powder, baking soda, and salt. Set aside.
  3. Using a mixer, beat softened butter and sugar on medium speed until light and fluffy, about 4-5 minutes.
  4. Beat in eggs one at a time, fully incorporating each before adding the next, then stir in vanilla extract.
  5. Alternate adding dry ingredients and buttermilk, starting and ending with dry ingredients, mixing on low speed until just combined.
  6. Divide batter evenly into prepared pans (about 2 cups or 475ml per pan) and smooth the tops.
  7. Bake for 30-35 minutes until a toothpick inserted in the center comes out clean or with a few crumbs.
  8. Let cakes rest in pans for 10 minutes, then turn out onto a cooling rack to cool completely before frosting.
  9. For buttercream, beat softened butter on medium speed until creamy, about 2 minutes.
  10. Gradually add powdered sugar, one cup at a time, mixing well after each addition.
  11. Stir in finely ground lavender buds and vanilla extract. Add heavy cream a tablespoon at a time until spreadable consistency is reached.
  12. Divide buttercream into three bowls: leave one plain, tint the second with a small amount of purple gel for light lavender, and add more gel to the third for deeper purple.
  13. Place one cake layer on serving plate, spread lightest lavender buttercream on top, add second layer, then frost entire cake with white buttercream as crumb coat. Chill 15 minutes.
  14. Apply ombre buttercream in horizontal bands from light to dark lavender around cake, smoothing and blending edges for gradient effect.
  15. Refrigerate cake for 20-30 minutes to firm up frosting before serving.

Notes

Bring eggs and dairy to room temperature before baking for a tender crumb. Grind lavender buds finely to avoid gritty texture. Chill crumb coat before final frosting for smooth finish. Cake layers can be made a day ahead and wrapped tightly. If buttercream is too stiff, knead in a teaspoon of cream or milk to soften.
