  • 8 slices white sandwich bread, crusts removed
  • 4 oz smoked salmon, thinly sliced
  • 1 medium English cucumber, thinly sliced
  • 4 oz cream cheese, softened
  • 2 tbsp fresh dill, finely chopped
  • 1 tsp lemon juice, freshly squeezed
  • Black pepper, to taste
  • Optional: pinch of smoked paprika or a few capers

Instructions

  1. Prepare the cream cheese spread: In a small bowl, combine softened cream cheese, finely chopped dill, lemon juice, and black pepper. Mix until smooth and evenly blended. (Tip: Let cream cheese sit at room temperature for 15 minutes before mixing.)
  2. Slice the cucumber into thin, even slices about 1/8 inch (3 mm) thick. Pat dry with paper towels to remove excess moisture.
  3. Trim the bread by removing crusts from each slice. Cut each slice into 3 or 4 finger-sized rectangles depending on preferred sandwich size.
  4. Assemble sandwiches by spreading a generous layer of dill cream cheese on each bread piece. Lay 1-2 slices of smoked salmon evenly on top, followed by 2-3 slices of cucumber, layering slightly overlapping.
  5. Top with another bread piece to form a sandwich. Gently press down to seal. Trim edges again if desired for a cleaner look.
  6. Chill sandwiches on a platter covered with plastic wrap for at least 15 minutes to meld flavors and keep bread from drying out.
  7. Serve arranged neatly on a serving tray, garnished with a sprig of dill or a thin lemon twist.

Notes

Pat cucumber slices dry to prevent soggy sandwiches. Let cream cheese soften at room temperature for easier spreading. Chill sandwiches before serving to meld flavors and keep bread fresh. Lightly mist bread with water if too dry before spreading cream cheese.
