  • 1 teaspoon kosher salt
  • Β½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • Β½ cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 tablespoon dill pickle juice
  • 1 teaspoon smoked paprika
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste
  • 46 hamburger buns, toasted
  • Leafy lettuce (romaine or iceberg)
  • Tomato slices
  • Thinly sliced red onions
  • Pickle slices

Instructions

  1. In a large bowl, combine 1 Β½ pounds ground beef with 1 teaspoon kosher salt, Β½ teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 tablespoon Worcestershire sauce. Gently mix with your hands until just combined.
  2. Divide the meat into 4-6 equal portions and shape each into a slightly flattened patty about ΒΎ inch thick. Press a shallow dimple in the center of each patty with your thumb.
  3. In a small bowl, whisk together Β½ cup mayonnaise, 2 tablespoons yellow mustard, 1 tablespoon dill pickle juice, 1 teaspoon smoked paprika, and 1 teaspoon honey. Season with salt and pepper to taste. Chill in the fridge.
  4. Preheat grill, grill pan, or skillet over medium-high heat for about 5 minutes. If using a skillet, add a light drizzle of oil.
  5. Place patties on the hot surface. Cook for 4-5 minutes on the first side without moving. Flip and cook another 3-4 minutes for medium doneness (160Β°F internal temperature).
  6. Toast hamburger buns cut-side down on grill or skillet until golden and slightly crispy, about 1-2 minutes.
  7. Spread secret sauce on bottom bun. Add lettuce, cooked patty, tomato slices, onions, and pickles. Top with more secret sauce and bun lid.
  8. Serve immediately.
