This incredibly moist and tender banana bread uses sour cream to create a velvety crumb with a subtle tang. It’s a foolproof recipe that turns overripe bananas into a delicious, comforting loaf.

  • 3 large or 4 medium overripe bananas, mashed (about 1 ½ cups)
  • ½ cup sour cream, at room temperature
  • ⅓ cup unsalted butter, melted and slightly cooled
  • ¾ cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup optional mix-ins (chocolate chips, chopped walnuts, or pecans)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan thoroughly with butter or non-stick spray. Optionally, line with parchment paper, leaving an overhang on the two long sides.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until smooth. A few small lumps are fine.
  3. Add the sour cream, melted butter, sugar, eggs, and vanilla extract to the mashed bananas. Whisk until smooth and well combined.
  4. In a separate small bowl, whisk together the flour, baking soda, and salt.
  5. Pour the dry ingredients into the wet ingredients. Fold with a rubber spatula or wooden spoon just until no streaks of flour remain. Do not overmix; a few lumps are okay.
  6. If using mix-ins, gently fold them in now.
  7. Pour the batter into the prepared loaf pan and spread evenly. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly after 40 minutes, tent loosely with aluminum foil.
  8. Place the pan on a cooling rack and let cool for 10 minutes. Then, lift the bread out using the parchment paper handles (if used) and transfer to the rack to cool completely before slicing.

Notes

Do not overmix the batter; overmixing develops gluten and results in a tough bread. Room temperature ingredients ensure a smooth batter. Use heavily spotted or black bananas for the best flavor and sweetness. Let the bread cool completely before slicing to avoid a gummy texture.
