Perfect Amaretto-Glazed Grilled Apricots Recipe with Mascarpone and Honey

A quick and elegant summer dessert featuring smoky grilled apricots glazed with amaretto, topped with creamy mascarpone and drizzled with honey.

  • 8 fresh apricots, ripe but firm
  • 3 tablespoons unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup amaretto liqueur
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons honey
  • Mascarpone cheese, about 2 tablespoons per apricot half
  • Optional garnish: toasted almonds or fresh mint leaves

Instructions

  1. Rinse and pat dry 8 fresh apricots. Slice each apricot in half and gently remove the pit. Set aside.
  2. In a small saucepan over low heat, melt 3 tablespoons of unsalted butter. Stir in 1/4 cup brown sugar until dissolved.
  3. Add 1/4 cup amaretto liqueur, 1 tablespoon fresh lemon juice, and 2 tablespoons honey. Stir constantly until the glaze is smooth and slightly thickened, about 3-4 minutes. Remove from heat.
  4. Preheat the grill or grill pan to medium-high heat (around 375°F). Lightly oil the grates to prevent sticking.
  5. Using a brush, coat each apricot half generously with the amaretto glaze.
  6. Place apricot halves cut-side down on the grill. Grill for 3-4 minutes until grill marks appear and the fruit softens slightly. Brush with more glaze halfway through grilling.
  7. Flip apricots and grill skin side for another 2 minutes to intensify caramelization.
  8. Transfer grilled apricots to serving plates. Add a generous dollop (about 2 tablespoons) of mascarpone cheese on each apricot half. Drizzle additional honey over the top.
  9. Garnish with toasted almonds or fresh mint if desired and serve immediately while warm.

Notes

If glaze thickens too much while resting, gently rewarm it before brushing on apricots. Keep an eye on the grill to avoid burning; apricots should be tender but not mushy. For a non-alcoholic version, substitute amaretto with almond extract and orange juice. Vegan option: replace mascarpone with whipped coconut cream and honey with maple syrup.
