Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Scrub the russet potatoes clean and dry them thoroughly. Poke each potato 6-8 times all around with a fork to let steam escape during baking.
  3. Rub each potato with olive oil, then sprinkle generously with coarse sea salt.
  4. Place the potatoes directly on the oven rack or on a baking sheet. Bake for about 50-60 minutes until skins are crisp and a skewer slides easily into the center.
  5. While potatoes bake, cook bacon slices in a skillet over medium heat until crispy. Drain on paper towels, then crumble once cooled.
  6. Chop green onions, slice jalapeños and olives, dice tomatoes, and steam broccoli until just tender. Set aside.
  7. When potatoes are cool enough to handle (about 10 minutes out of the oven), cut each in half lengthwise. Carefully scoop the insides into a bowl, leaving a thin shell of potato to maintain structure.
  8. Add softened butter, a pinch of salt, and a few spoonfuls of sour cream to the potato flesh. Mash gently until creamy but still fluffy. Taste and adjust seasoning.
  9. Spoon the potato mixture back into the skins, then pile on shredded cheese, bacon, veggies, and any other toppings you like.
