  • 810 oz (225-280g) Ribeye or New York strip steaks, preferably well-marbled
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon garlic powder (optional)
  • Fresh rosemary or thyme sprigs (optional)
  • 1 medium head cauliflower florets (about 4 cups / 600g), chopped into bite-sized pieces
  • 3 tablespoons unsalted butter
  • 1/2 cup (120ml) heavy cream (can substitute with full-fat coconut milk for dairy-free)
  • 1 1/2 cups (150g) sharp cheddar cheese, shredded
  • 2 ounces (56g) cream cheese, softened
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/4 teaspoon smoked paprika (optional)

Instructions

  1. About 30 minutes before cooking, take the steaks out of the fridge and pat them dry with paper towels. Rub each steak with olive oil, then season generously with salt, pepper, and garlic powder if using. Let them rest at room temperature.
  2. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 8-10 minutes until tender but not mushy. Drain well and set aside.
  3. In a medium saucepan, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Stir in the heavy cream and cream cheese, whisking until smooth and gently bubbling.
  4. Transfer the cooked cauliflower to a blender or use an immersion blender in the pot. Blend until smooth and creamy. Return the blended cauliflower to the pan with the cream mixture.
  5. Gradually stir in the shredded cheddar cheese until melted and fully incorporated. Season with onion powder, salt, pepper, and smoked paprika if desired. Keep warm on low heat, stirring occasionally.
  6. Preheat your grill or grill pan to high heat. Place the steaks on the grill and cook for about 4-5 minutes per side for medium-rare (internal temperature 130-135°F / 54-57°C). Adjust timing for preferred doneness. Add rosemary or thyme sprigs on the grill for aroma if desired.
  7. Remove steaks from the grill and let them rest for 5 minutes to redistribute juices.
  8. Plate the juicy grilled steak alongside a generous scoop of creamy cauliflower mac. Garnish with freshly chopped parsley or chives if desired.
