This Homemade Spiced Pumpkin Halloween Coffee Syrup started as a happy accident but has become a fall tradition. It’s simple enough for a busy weekday morning but special enough to make any day feel like a celebration, with warm spices, subtle heat from black pepper, and a gorgeous orange color.

  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) water
  • 2 tablespoons (12g) pumpkin pie spice
  • 1 cinnamon stick
  • 1 teaspoon (5ml) vanilla extract
  • ⅛ teaspoon black pepper
  • 23 drops orange food coloring (optional)
  • ⅛ teaspoon fine sea salt

Instructions

  1. Toast the Spices (2 minutes): Place your medium saucepan over medium heat. Add the pumpkin pie spice and the cinnamon stick to the dry pan. Stir constantly for about 60-90 seconds, until you can smell the spices becoming fragrant. Be careful not to burn them.
  2. Add Sugar and Water (1 minute): Pour in the granulated sugar and water. Stir gently with your wooden spoon until the sugar starts to dissolve.
  3. Bring to a Simmer (5-7 minutes): Increase the heat to medium-high and bring the mixture to a gentle simmer. Once it’s simmering, reduce the heat to low. Let it bubble gently for 5-7 minutes, stirring occasionally. The syrup will thicken slightly as it cooks.
  4. Add the Secret Ingredient (30 seconds): Remove the pan from heat. Stir in the pinch of black pepper and the pinch of salt.
  5. Steep the Flavors (10 minutes): Let the syrup sit off the heat for 10 minutes to allow the cinnamon stick and spices to infuse fully.
  6. Strain the Syrup (2 minutes): Place your fine-mesh strainer over your glass jar or bottle. Carefully pour the syrup through the strainer to remove the cinnamon stick and any spice clumps. If using orange food coloring, add 2-3 drops directly into the jar and swirl gently.
  7. Add Vanilla (30 seconds): Stir in the vanilla extract directly into the jar. Give it a gentle swirl to combine.
  8. Cool and Store (30 minutes): Let the syrup cool completely at room temperature before sealing the jar. Once cool, seal the jar tightly.

Notes

The syrup will continue to thicken as it cools. If it seems too thin when warm, don’t worry — it will set up perfectly once it reaches room temperature. If it’s too thick after cooling, just add a tablespoon of warm water and shake well. The flavors deepen after a day or two in the refrigerator.
