A simple, healthy, and gluten-free zucchini bread made with almond flour that is moist, tender, and perfect for breakfast, snacks, or dessert.

  • 2 ½ cups (240g) almond flour
  • 2 medium zucchinis (about 2 cups grated)
  • 3 large eggs, room temperature
  • ⅓ cup (80ml) pure maple syrup
  • ⅓ cup (80ml) olive oil or avocado oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup (60g) chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your loaf pan with parchment paper or grease it lightly with oil.
  2. Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as you can.
  3. In a large bowl, whisk together the eggs, maple syrup, oil, and vanilla extract until well combined and slightly frothy.
  4. In a separate bowl, mix the almond flour, baking soda, cinnamon, and salt. Stir well to evenly distribute the baking soda and spices.
  5. Slowly fold the dry ingredients into the wet ingredients, stirring gently to avoid overmixing. The batter will be thick but moist.
  6. Fold in the grated zucchini and nuts (if using) evenly into the batter.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes, checking doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs. Tent with foil if the top browns too fast.
  9. Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely.

Squeeze out excess moisture from zucchini to avoid sogginess. Use room temperature eggs for better mixing. Tent with foil if bread browns too fast. Let bread cool completely to prevent sogginess. For vegan version, replace eggs with flax eggs. You can substitute almond flour with sunflower seed flour for nut-free option but flavor will change.
