  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1 scoop vanilla protein powder (about 30g)
  • 2 large eggs, at room temperature
  • ½ cup unsweetened almond milk
  • ¼ cup maple syrup
  • 2 tablespoons coconut oil, melted
  • 1½ teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup dark chocolate chips (optional)
  • ¼ cup chopped pecans or walnuts (optional)
  • ¼ cup dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with silicone or paper liners. If using paper liners, spray them lightly with non-stick cooking spray.
  2. In a large mixing bowl, whisk together the wet ingredients: pumpkin puree, eggs, almond milk, maple syrup, and melted coconut oil until smooth and well combined.
  3. In a separate bowl, combine the dry ingredients: rolled oats, protein powder, pumpkin pie spice, cinnamon, baking powder, and salt. Stir with a fork or whisk to break up any clumps.
  4. Pour the dry ingredients into the wet ingredients. Stir gently with a spatula until just combined. Do not overmix.
  5. Fold in any optional mix-ins (chocolate chips, nuts, or dried cranberries) with a few quick strokes.
  6. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  7. Bake for 18-22 minutes, until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. Let the cups cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  9. Enjoy warm or at room temperature.

Notes

For best results, use room temperature eggs to prevent coconut oil from seizing. Start checking for doneness at 18 minutes to avoid overbaking. Cool completely before storing to prevent sogginess. These freeze beautifully for up to 3 months.
