A festive and easy Halloween appetizer featuring creamy guacamole served in hollowed-out cherry tomatoes or mini sweet peppers, decorated with olive eyes and a celery stem to resemble Frankenstein’s monster.

Ingredients

  • 3 large ripe avocados (preferably Haas)
  • 23 fresh limes, juiced
  • 1 teaspoon fine sea salt
  • 1 clove garlic, minced
  • 2 tablespoons fresh cilantro, chopped
  • 46 slices black olives
  • 1 small celery stalk (23 inches long)
  • 68 mini sweet peppers or cherry tomatoes (for cups)
  • 1 tablespoon jalapeño, minced (optional)

Instructions

  1. Wash mini sweet peppers or cherry tomatoes. Cut off tops of peppers and remove seeds/membranes, or halve tomatoes for a flatter base. Pat dry thoroughly.
  2. If using peppers, scoop out the inside with a small spoon to create space for the guacamole.
  3. Cut avocados in half, remove pits, and scoop flesh into a mixing bowl.
  4. Add lime juice immediately to prevent oxidation.
  5. Mash avocados with a fork until creamy but with some small chunks remaining.
  6. Add minced garlic, chopped cilantro, salt, and jalapeño (if using). Stir gently to combine.
  7. Taste and adjust seasoning with more salt or lime if needed.
  8. Spoon guacamole into the prepared pepper or tomato cups, packing it down slightly.
  9. Place two slices of black olive on top of each cup for eyes.
  10. Insert the celery stalk into the top of the guacamole between the eyes to create the monster stem.
  11. Serve immediately.

Notes

Avocados should be at room temperature for easier mashing and better texture. To prevent browning, press plastic wrap directly onto the surface of the guacamole if storing ahead. Assemble the monsters just before serving to maintain visual appeal and crispness.
