  • 1 can full-fat coconut milk, chilled overnight
  • 12 tablespoons powdered sugar or maple syrup (adjust sweetness to taste)
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1 tablespoon maple syrup (optional)
  • 1 teaspoon fresh lemon juice
  • 1 cup fresh or frozen blueberries (if frozen, thaw and drain excess liquid)
  • 1 teaspoon lemon zest
  • About 1 cup prepared coconut whip (from above)
  • Optional toppings: toasted coconut flakes, chopped nuts like almonds or pistachios, fresh mint leaves

Instructions

  1. Place a can of full-fat coconut milk in the refrigerator overnight to chill and separate the cream.
  2. Carefully open the chilled can without shaking it. Scoop out the solid cream into a mixing bowl, leaving the liquid behind.
  3. Whip the coconut cream using an electric mixer or hand whisk until light and fluffy, about 3-5 minutes. Add powdered sugar and vanilla extract halfway through whipping.
  4. In a small bowl, toss sliced strawberries with maple syrup and lemon juice. Let macerate for 5-10 minutes.
  5. If using frozen blueberries, thaw and drain excess liquid. Toss blueberries with lemon zest.
  6. In serving glasses or jars, layer strawberries at the bottom, then coconut whip, then blueberries. Repeat layers if desired, finishing with a dollop of coconut whip on top.
  7. Garnish with toasted coconut flakes, chopped nuts, or fresh mint leaves.
  8. Chill the parfaits in the refrigerator for at least 15 minutes before serving.

Notes

Chill the coconut milk thoroughly overnight and do not shake the can to ensure the cream separates properly. Whip on medium speed to avoid grainy texture. Assemble just before serving to keep layers distinct and prevent watery coconut whip. Leftover coconut water can be used in smoothies.
