These patriotic popsicles combine creamy Greek yogurt with fresh berry purees in distinct red, white, and blue layers for a refreshing and healthy summer treat.

  • 1 cup fresh or frozen blueberries (if frozen, thawed)
  • 1 teaspoon honey or maple syrup (optional, for sweetness)
  • 1 teaspoon lemon juice
  • 2 cups plain Greek yogurt (full-fat recommended, 2% works too)
  • 2 tablespoons honey or agave syrup (adjust to taste)
  • 1 teaspoon pure vanilla extract (optional)
  • 1 cup fresh or frozen strawberries, hulled (thawed if frozen)
  • 1 teaspoon honey or maple syrup (optional)
  • 1 teaspoon lemon juice

Instructions

  1. Blend the blueberries with honey (if using) and lemon juice until smooth. Taste and adjust sweetness as needed. Pour the blueberry puree into a bowl.
  2. Rinse the blender, then blend the strawberries with honey and lemon juice until smooth.
  3. In a bowl, stir together the Greek yogurt, honey, and vanilla extract until smooth and creamy. Taste and add more honey if desired.
  4. Pour about 2 tablespoons of the blueberry puree into each popsicle mold. Tap gently on the counter to level the layer.
  5. Freeze for about 15-20 minutes until slightly firm but not fully frozen.
  6. Add 3 tablespoons of the yogurt mixture on top of the blueberry layer, spreading gently to avoid mixing.
  7. Freeze again for 15-20 minutes until set.
  8. Spoon in 2 tablespoons of strawberry puree on top to finish the red layer.
  9. Insert popsicle sticks and freeze for at least 4 hours or overnight.
  10. Run warm water over the outside of the molds for a few seconds to loosen the popsicles before gently pulling them out.
  11. Serve immediately for best texture.

Notes

Do not rush freezing between layers to keep colors distinct. Use full-fat Greek yogurt for creamier texture. If using frozen berries, thaw and drain excess liquid. For dairy-free version, substitute Greek yogurt with coconut or almond yogurt. Use a spoon or ladle close to the surface when layering to minimize mixing.
