Fresh Poolside Fiesta Dip Trio in Mason Jars

A vibrant and easy-to-make trio of dips perfect for poolside snacking or casual gatherings, featuring creamy avocado lime dip, fresh tomato salsa, and spicy black bean & corn dip served in Mason jars.

  • 2 ripe avocados, peeled and pitted
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1 small garlic clove, minced
  • Salt and black pepper to taste
  • Optional: a handful of fresh cilantro leaves
  • 3 medium vine-ripened tomatoes, finely diced
  • 1/4 cup finely chopped red onion
  • 1 small jalapeño, seeded and minced
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 2 tablespoons fresh lime juice
  • Salt to taste
  • 1 cup canned black beans, rinsed and drained
  • 1 cup fresh or frozen corn kernels (thawed if frozen)
  • 1 small red bell pepper, diced
  • 1/4 cup chopped green onions
  • 1 tablespoon fresh lime juice
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon chili powder

Instructions

  1. Prepare the Avocado Lime Dip: In a food processor or blender, combine peeled avocados, Greek yogurt, lime juice, and minced garlic. Blend until smooth but still creamy. Pulse a few times if you prefer some texture. Season with salt and pepper to taste. Stir in chopped cilantro if using. Transfer to a Mason jar and refrigerate.
  2. Make the Fresh Tomato Salsa: In a mixing bowl, gently toss diced tomatoes, red onion, jalapeño, cilantro, cumin, and lime juice. Season with salt. Let sit for about 10 minutes to meld flavors. Spoon into a clean Mason jar and keep chilled until serving.
  3. Prepare the Spicy Black Bean & Corn Dip: In another bowl, combine black beans, corn, red bell pepper, and green onions. Add lime juice, smoked paprika, chili powder (if using), salt, and pepper. Mix well and adjust seasoning to taste. Transfer to a Mason jar and chill.
  4. Chill and Serve: Chill all three dips for at least 30 minutes before serving. Arrange Mason jars on a tray with tortilla chips, sliced veggies, or crackers.

Notes

Prepare the tomato salsa and black bean dip a day ahead for better flavor; make avocado dip the same day to avoid browning. Use lime juice to slow oxidation of avocado. If no blender, mash avocado with a fork for a chunkier texture. Adjust spice level by omitting jalapeño and chili powder or adding cayenne or serrano peppers. Serve dips chilled but let sit 10 minutes at room temperature before serving. Avoid freezing avocado dip to prevent grainy texture.
