  • 1 medium jalapeño pepper, seeded or not depending on heat preference
  • ¼ cup finely chopped cilantro
  • 2 tablespoons finely diced red onion
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • ½ teaspoon salt
  • Optional: 1 small garlic clove, minced

Instructions

  1. Wash and dry the peaches. Remove the pits and dice the fruit into roughly ½-inch cubes.
  2. Cut off the stem of the jalapeño and slice it in half lengthwise. Remove seeds if less heat is desired. Finely chop about 1 tablespoon total.
  3. Peel and finely dice about 2 tablespoons of red onion.
  4. Rinse, pat dry, and finely chop cilantro to measure ¼ cup, including tender stems.
  5. In a mixing bowl, gently toss the diced peaches, jalapeño, onion, and cilantro together.
  6. Pour 2 tablespoons fresh lime juice and 1 tablespoon honey over the mixture. Stir gently to coat evenly.
  7. Sprinkle ½ teaspoon salt, mix again, and taste. Adjust salt or lime juice as preferred.
  8. Let the salsa sit at room temperature for 5-10 minutes to let the flavors meld. Serve with tortilla chips or as a topping for grilled chicken or fish.
