Ingredients

Scale
  • 6 large fresh peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 1 teaspoon lemon zest
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon all-purpose flour
  • 1 cup rolled oats (old-fashioned)
  • 1/2 cup slivered almonds, lightly toasted
  • 1/3 cup packed brown sugar
  • 6 tablespoons cold unsalted butter, cut into small pieces
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. Peel and slice around 6 large peaches into roughly 1/2-inch thick slices. Toss them in a bowl with 1/2 cup granulated sugar, 1 teaspoon lemon zest, 1/2 teaspoon ground cinnamon, and 1 tablespoon all-purpose flour. Let sit while preparing the topping.
  3. In a separate bowl, combine 1 cup rolled oats, 1/2 cup toasted slivered almonds, 1/3 cup packed brown sugar, and a pinch of salt. Add 6 tablespoons cold unsalted butter cut into small cubes. Use a pastry cutter or fingers to blend until crumbly with small lumps of butter visible. Stir in 1 teaspoon vanilla extract if using.
  4. Transfer the peach mixture into a greased 8×8-inch baking dish, spreading evenly. Sprinkle the almond oat topping evenly over the peaches without packing it down.
  5. Bake for 40-45 minutes until the topping is golden brown and peach juices bubble around the edges. Tent loosely with foil for the last 10 minutes if topping browns too quickly.
  6. Let the peach crisp rest for at least 15 minutes before serving to thicken the juices.

Notes

Use firm yet ripe peaches to avoid sogginess. Keep butter cold when mixing topping for crumbly texture. Toast almonds lightly to enhance crunch and flavor. If topping browns too fast, tent with foil. Let crisp rest before serving to thicken juices. Frozen peaches can be used if thawed and drained well. For gluten-free, substitute all-purpose flour with almond flour or gluten-free blend and use certified gluten-free oats. Nut-free option: replace almonds with toasted pumpkin seeds.
