A refreshing and hydrating drink combining crisp cucumber and sweet melon with a hint of lime and mint, perfect for hot days or any occasion.

  • 2 medium cucumbers, peeled and chopped
  • 3 cups ripe melon cubes (cantaloupe or honeydew)
  • Juice of 2 limes
  • 4 cups cold filtered water
  • 23 tablespoons agave syrup or honey
  • A small handful fresh mint leaves, roughly chopped (optional)
  • Ice cubes for serving

Instructions

  1. Peel the cucumbers and chop into roughly 1-inch pieces. Cube the melon into similar sizes.
  2. Add cucumber, melon, and fresh lime juice into a blender. Pour in 3 cups of cold water and add the sweetener.
  3. Blend on high for about 1 minute until smooth but not too watery.
  4. Pause and taste; if too thick, add remaining 1 cup of water. Adjust sweetness if needed and blend briefly again.
  5. Stir in chopped fresh mint leaves or pulse in blender for stronger mint flavor (optional).
  6. Optionally strain the mixture through a fine mesh strainer or cheesecloth into a pitcher to remove pulp and seeds.
  7. Refrigerate for at least 30 minutes to chill and let flavors meld.
  8. Serve over ice cubes with a lime wedge garnish if desired.

Peel cucumbers to avoid bitterness. Adjust sweetness based on melon ripeness. Fresh lime juice is essential for brightness. Mint is optional but highly recommended for aroma and flavor. For a smoother texture, strain the drink; otherwise, keep pulp for a homemade feel. Use frozen melon cubes to chill without watering down. Stir before serving if separation occurs. Refrigerate up to 48 hours.
