  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup (120g) small-curd cottage cheese (can substitute Greek yogurt)
  • 3 large eggs, room temperature
  • 1/4 cup (60ml) unsweetened almond milk (can substitute coconut or oat milk)
  • 1 teaspoon vanilla extract
  • 12 tablespoons low-carb sweetener (optional, erythritol or monk fruit)
  • Butter or coconut oil for cooking

Instructions

  1. Preheat your skillet over medium-low heat and add a small pat of butter or coconut oil to coat, about 5 minutes.
  2. In a large bowl, whisk together almond flour, baking powder, salt, and cinnamon if using.
  3. In a separate bowl or blender, combine eggs, cottage cheese, almond milk, vanilla extract, and sweetener if using. Blend or whisk until smooth.
  4. Pour the wet mixture into the dry ingredients and fold gently until combined. Adjust batter consistency with more almond milk or almond flour if needed.
  5. Spoon about 1/4 cup batter per pancake onto the skillet. Cook for 3-4 minutes until bubbles form on the surface and edges look set.
  6. Flip carefully with a spatula and cook for another 2-3 minutes until golden brown and cooked through.
  7. Transfer cooked pancakes to a plate and cover loosely with foil to keep warm. Repeat with remaining batter.

Notes

Use fresh baking powder for best rise. Blend cottage cheese and eggs for smoother batter and fluffier pancakes. Cook on medium-low heat to avoid burning. Let batter rest 5 minutes before cooking for better texture. Adjust sweetness to taste or omit sweetener for savory pancakes.
