Instructions

  1. Mash the bananas in a medium mixing bowl using a fork or potato masher until mostly smooth with a few small lumps remain (about 2-3 minutes).
  2. Add the eggs and cottage cheese to the mashed bananas and whisk until creamy and slightly thick (about 2 minutes).
  3. Stir in the vanilla protein powder, baking powder, ground cinnamon (if using), and salt. Mix gently until just combined, avoiding overmixing (about 2 minutes).
  4. Fold in the blueberries gently. If using frozen blueberries, add them directly without thawing.
  5. Heat a non-stick skillet or griddle over medium heat and add about 1 teaspoon of coconut oil or butter. Let it melt and coat the surface evenly (about 2 minutes).
  6. Using a 1/4 cup measuring cup, scoop batter onto the pan. Cook for 3-4 minutes until bubbles form on the surface and edges look set.
