  • 1 garlic clove, minced
  • 1 tablespoon fresh lime juice

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels. Toss shrimp in olive oil, salt, and pepper. Let them sit while you prepare the glaze (about 5 minutes).
  2. In a medium bowl, whisk together sriracha sauce, honey, soy sauce, grated ginger, minced garlic, and lime juice until smooth. Taste and adjust heat or sweetness if needed.
  3. Thread 4-5 shrimp onto each skewer, piercing through the thickest part to keep them secure. Try not to crowd them too tightly to allow even cooking.
  4. Heat the grill or grill pan to medium-high heat (about 400°F / 200°C). Oil the grates lightly to prevent sticking.
  5. Place skewers on the hot grill. Cook for 2-3 minutes per side, brushing generously with the sriracha honey glaze after flipping. The shrimp should turn opaque and slightly charred on edges—this usually signals doneness. Avoid overcooking.
