  • 34 cloves garlic, minced
  • 2 tablespoons fresh oregano, chopped (or 2 teaspoons dried oregano)
  • 1/2 cup olive oil (extra virgin recommended, or avocado oil)
  • 2 tablespoons red wine vinegar
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper, to taste

Instructions

  1. Prep the Chimichurri: In a mixing bowl, combine the chopped parsley, minced garlic, oregano, red pepper flakes, salt, and pepper. Stir in the red wine vinegar, then slowly whisk in the olive oil until the sauce is well blended. Set aside for at least 15 minutes to let the flavors marry while you prep the steak.
  2. Prepare the Skirt Steak: Trim any excess fat or silver skin from the skirt steak. Pat it dry with paper towels. Season both sides generously with kosher salt and freshly ground black pepper. Lightly brush with olive oil to prevent sticking.
  3. Preheat the Grill: Get your grill hot — medium-high heat is perfect, around 450°F (232°C). If using charcoal, wait until the coals are glowing red with a light layer of ash.
  4. Grill the Steak: Place the skirt steak on the grill. Cook for about 3-4 minutes per side for medium-rare (internal temperature of 130-135°F / 54-57°C). Use tongs to flip; avoid piercing the meat with a fork to keep juices inside.
  5. Rest the Meat: Remove the steak from the grill and let it rest for 5-10 minutes to allow juices to redistribute.
  6. Slice and Serve: Slice the steak against the grain into thin strips. Spoon generous amounts of chimichurri over the top or serve it on the side for dipping. Enjoy immediately!
