A quick and easy recipe featuring colorful fruit skewers paired with a fluffy homemade marshmallow dip, perfect for summer celebrations and crowd-pleasing snacks.

  • Fresh strawberries, hulled and halved
  • Blueberries, washed and dried
  • Bananas, peeled and sliced into thick rounds
  • Wooden or bamboo skewers, 6-8 inches long
  • ½ cup (115 g) softened cream cheese
  • ½ cup (140 g) marshmallow fluff or marshmallow creme
  • ½ teaspoon pure vanilla extract
  • 12 tablespoons (1530 ml) milk or dairy-free milk (optional)
  • Up to 2 tablespoons (1525 g) powdered sugar (optional)

Instructions

  1. Prepare the Fruit (10 minutes): Wash all the berries carefully and pat them dry. Hull and halve the strawberries. Peel the bananas and slice into ½-inch thick rounds. Set aside on a plate.
  2. Make the Marshmallow Dip (5-7 minutes): In a mixing bowl, combine softened cream cheese and marshmallow fluff. Add vanilla extract. Beat with a hand mixer or whisk until smooth and fluffy. Stir in milk if a thinner dip is desired. Add powdered sugar to taste if sweeter dip is preferred.
  3. Assemble the Skewers (10-15 minutes): Thread the fruit onto skewers in a festive pattern—start with a strawberry half (red), then a banana slice (white), followed by a blueberry (blue). Repeat until the skewer is full, leaving space at the ends.
  4. Arrange and Serve: Lay the skewers on a serving platter. Place the marshmallow dip in a small bowl alongside. Optionally garnish the dip with crushed freeze-dried strawberries or fresh mint leaves.

Notes

Keep fruit cold until serving to maintain freshness. Soak skewers in water for 10 minutes if grilling to prevent burning. Soft or overripe fruit can become mushy on skewers. The dip can be made up to a day ahead and kept chilled. For vegan/dairy-free, use coconut cream cheese and dairy-free marshmallow fluff. Briefly grill skewers 1-2 minutes per side for a warm caramelized twist. Lemon juice on bananas helps prevent browning.
