  • 1 lb ground beef (80/20 blend)
  • 2 large eggs
  • 1 cup breadcrumbs (Panko recommended)
  • 1/4 cup milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste
  • Optional: 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C). Line a rimmed baking sheet with aluminum foil or prepare a 9×5 inch loaf pan with parchment paper.
  2. In a small bowl, whisk together 1/4 cup ketchup, brown sugar, Dijon mustard, and Worcestershire sauce to make the glaze. Set aside.
  3. In a medium mixing bowl, combine eggs, milk, minced garlic, and half of the glaze mixture. Whisk until well combined.
  4. Add breadcrumbs, diced onion, salt, and pepper to the wet ingredients. Stir gently until just combined; do not overmix.
  5. Transfer meat mixture to the prepared pan or baking sheet. Shape into a loaf and make a shallow indent down the center with your thumb.
  6. Bake for 40 minutes.
  7. Remove from oven and brush the remaining glaze over the top of the loaf.
  8. Return to oven and bake for another 15-20 minutes, or until internal temperature reaches 160°F (71°C).
  9. Remove from oven and let rest for at least 10 minutes before slicing to allow juices to redistribute.

Notes

For best results, use a rimmed baking sheet to allow heat circulation and prevent a soggy bottom. Do not overmix the meat to avoid a tough texture. Let the meatloaf rest for 10 minutes before slicing to ensure moist slices. Can be frozen for up to 3 months.
