Instructions

  1. Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper or aluminum foil.
  2. Wash and peel the sweet potatoes (optional). Cut them into 1-inch cubes, keeping them uniform in size.
  3. Slice the chicken sausage into 1/2-inch thick rounds.
  4. In a large mixing bowl, combine the cubed sweet potatoes, 1 tablespoon olive oil, garlic powder, smoked paprika, dried rosemary, salt, and pepper. Toss until evenly coated.
  5. Spread the sweet potatoes in a single layer on the prepared sheet pan, ensuring they are not overlapping.
  6. Roast the sweet potatoes for 10 minutes.
  7. Remove the pan from the oven. Add the sliced chicken sausage and the remaining 1 tablespoon olive oil. Toss everything together gently and spread back into a single layer.
  8. Return the pan to the oven and roast for another 15-20 minutes, until the sweet potatoes are tender and caramelized on the edges and the sausage is heated through with browned spots.
  9. Optional: For extra crispy edges, switch the oven to broil for the last 2 minutes, watching closely to prevent burning.
  10. Remove from the oven and let rest for 2 minutes. Garnish with fresh parsley, red pepper flakes, or a drizzle of balsamic glaze if desired. Serve warm.
