  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×5 inch loaf pan by greasing it with butter or oil.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Melt the butter in the microwave and let it cool slightly, then add it to the mashed bananas along with the sugar, eggs, and vanilla extract. Whisk vigorously until the mixture is glossy and uniform.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Pour the dry ingredients into the wet ingredients and gently fold them together with a spatula or spoon until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, cover loosely with foil after 30 minutes.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes
