  • 34 ripe peaches, sliced
  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk or half-and-half (or dairy-free milk like oat milk)
  • 1/3 cup (67 g) granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • For the Cinnamon Streusel Topping:
  • 1/2 cup (60 g) all-purpose flour (or almond flour for gluten-free)
  • 1/3 cup (67 g) brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 cup (57 g) unsalted butter, cold and cubed (or vegan butter)
  • Optional: 1/4 cup chopped pecans or walnuts

Instructions

  1. Slice the bread into roughly 1-inch cubes. Peel and slice the peaches into thin wedges. Pat dry if very juicy.
  2. In a large bowl, whisk together eggs, milk or half-and-half, granulated sugar, vanilla extract, ground cinnamon, and salt until combined and slightly frothy.
  3. Grease a 9×13-inch baking dish. Spread half of the bread cubes evenly on the bottom, layer peach slices on top, then cover with remaining bread cubes.
  4. Pour the custard mixture evenly over the bread and peaches, pressing gently to help soak the bread.
  5. In a medium bowl, combine flour, brown sugar, and cinnamon. Add cold cubed butter and blend with a pastry cutter or fingers until coarse crumbs form. Stir in nuts if using.
  6. Sprinkle the cinnamon streusel evenly over the soaked bread and peaches.
  7. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight.
  8. Preheat oven to 350°F (175°C). Remove casserole from fridge and let sit at room temperature while oven heats.
  9. Bake uncovered for 45-50 minutes until top is golden brown and custard is set (knife inserted should come out clean).
  10. Let the casserole cool for 5 minutes before serving.

Notes

Use day-old bread to avoid sogginess. Room temperature eggs and milk ensure even soaking. If streusel browns too fast, cover loosely with foil halfway through baking. Let casserole rest 5 minutes before serving. For gluten-free, use gluten-free bread and almond flour. For vegan, substitute eggs with flax eggs and use plant-based milk and vegan butter.
