A quick and easy breakfast casserole using store-bought cinnamon rolls soaked overnight in a creamy custard, baked to golden perfection with a gooey, cinnamon-spiced texture.

  • 1 package (8 rolls) refrigerated cinnamon rolls with icing included
  • 6 large eggs, room temperature
  • 2 cups whole milk (480 ml)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • Pinch of salt
  • Powdered sugar or extra icing (optional, for dusting or drizzling before serving)

Instructions

  1. Preheat your oven to 350°F (175°C) if baking immediately; otherwise skip this step for overnight assembly.
  2. Unroll or cut the cinnamon rolls into halves or quarters and place evenly in a 9×13-inch baking dish.
  3. In a mixing bowl, whisk together eggs, whole milk, vanilla extract, ground cinnamon, nutmeg (if using), and salt until smooth and slightly frothy.
  4. Pour the custard mixture evenly over the cinnamon rolls, pressing down gently to help them absorb the custard.
  5. Cover the dish tightly with aluminum foil or plastic wrap and refrigerate for at least 6 hours or overnight. If short on time, soak for at least 30 minutes at room temperature.
  6. Remove the foil and bake uncovered at 350°F (175°C) for 35-45 minutes until the top is golden brown and set but still slightly jiggly in the center. Tent with foil if edges brown too quickly.
  7. Drizzle the included cinnamon roll icing or a simple glaze over the warm casserole.
  8. Let cool for about 5 minutes before serving. Optionally sprinkle with powdered sugar or fresh fruit.

Notes

Use room temperature eggs and milk for a smooth custard. Cover casserole tightly while soaking overnight to prevent drying. If baking edges brown too fast, tent with foil. Overnight soak is best but 30 minutes at room temp works in a pinch. Customize with nutmeg, cardamom, berries, nuts, or chocolate chips. Gluten-free cinnamon rolls can be used for gluten-sensitive diets.
