  • 1 pound ground beef (80/20 works best for flavor)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 4 cups chicken broth (low-sodium is best)
  • 2 cups whole milk
  • 1 ยฝ pounds Yukon Gold potatoes, peeled and diced into ยฝ-inch cubes (about 4 medium potatoes)
  • 1 teaspoon salt
  • ยฝ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ยฝ teaspoon garlic powder
  • 2 tablespoons Worcestershire sauce
  • 2 cups sharp cheddar cheese, freshly shredded
  • 4 ounces cream cheese, softened and cut into cubes
  • ยฝ cup sour cream
  • Crumbled cooked bacon (for topping, optional)
  • Diced dill pickles or pickle relish (for topping, optional)
  • Diced tomatoes (for topping, optional)
  • Shredded lettuce (for topping, optional)
  • Extra shredded cheddar cheese (for topping, optional)

Instructions

  1. Brown the beef. Place your pot over medium-high heat and add the olive oil. Once it shimmers, add the ground beef. Break it up with your wooden spoon and let it cook undisturbed for about 3-4 minutes until it gets a nice brown crust on one side. Then stir and continue cooking until fully browned, about 5-6 minutes total. Don’t drain all the fatโ€”leave about 1 tablespoon in the pot for flavor.   2. Sautรฉ the aromatics. Reduce the heat to medium. Add the diced onion to the pot with the remaining beef drippings. Cook, stirring occasionally, for 4-5 minutes until the onion is soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Make the roux. Sprinkle the flour over the onions and garlic. Stir constantly for 1-2 minutes until the flour is fully incorporated and turns a light golden color.
  4. Add the liquids. Slowly pour in the chicken broth while whisking continuously to prevent lumps. Then add the milk, whisking again until smooth. Scrape up any browned bits from the bottom of the pot.
  5. Simmer the potatoes. Add the diced potatoes, salt, pepper, smoked paprika, and garlic powder to the pot. Stir to combine. Bring the soup to a gentle boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the potatoes are fork-tender. Stir occasionally to prevent sticking.
  6. Add the cheese and cream. Once the potatoes are tender, remove the pot from the heat. Add the cubed cream cheese and stir until it’s fully melted into the soup. Then add the shredded cheddar cheese, a handful at a time, stirring until each addition is completely melted before adding more. Finally, stir in the sour cream until fully incorporated.
  7. Return the beef. Add the reserved browned ground beef back to the pot. Stir gently to combine. Taste the soup and adjust seasoning if needed.
  8. Serve immediately. Ladle the soup into bowls and top with your favorite cheeseburger fixings.

Notes

For best results, shred your own cheddar cheese and add it off the heat to prevent graininess. Don’t let the soup boil after adding dairy to avoid curdling. If the soup thickens too much upon standing, thin with a splash of milk or broth.
