Easy One-Pan Garlic Butter Chicken and Vegetables

A quick and flavorful weeknight dinner featuring crispy skin-on chicken thighs and tender vegetables cooked in a rich garlic butter sauce in a single skillet.

  • 2–3 lbs bone-in, skin-on chicken thighs
  • 1/2 cup unsalted butter
  • 6–8 cloves fresh garlic, minced or thinly sliced
  • 1 tbsp olive oil
  • 1 head broccoli, cut into florets
  • 1 red bell pepper, sliced into strips
  • 1 yellow onion, chopped into large chunks
  • 1 tsp dried thyme
  • Pinch of red pepper flakes
  • Salt and black pepper, to taste

Instructions

  1. Pat chicken thighs completely dry with paper towels and season generously with salt and pepper. Let sit at room temperature for 10 minutes.
  2. Chop vegetables: cut broccoli into florets, slice bell peppers, and chunk the onion. Mince the garlic.
  3. Heat a large 12-inch skillet (preferably cast iron) over medium-high heat. Add olive oil and let it heat until it shimmers.
  4. Place chicken thighs skin-side down in the hot pan. Do not move them for 6-8 minutes to allow a deep golden-brown crust to form.
  5. Reduce heat to medium. Add butter and garlic to the pan. Tilt pan and spoon melting butter over the chicken skin for 2 minutes.
  6. Add broccoli, bell peppers, and onions to the pan. Sprinkle with thyme and red pepper flakes. Stir gently to coat veggies in garlic butter.
  7. Reduce heat to medium-low. Cover the pan with a lid and simmer for 15-20 minutes until chicken reaches an internal temperature of 165°F (74°C).
  8. Remove lid and simmer uncovered for 2-3 minutes to reduce sauce if there is too much liquid.
  9. Remove from heat and let chicken rest for 5 minutes before serving. Spoon pan juices over the top.

Notes

Ensure chicken is patted dry before cooking to ensure crispy skin. Do not overcrowd the pan; cook in batches if necessary. Garlic burns easily, so keep an eye on it and reduce heat if it starts to brown too quickly. For a lighter option, use chicken breasts but reduce cooking time to avoid dryness.
