  • 2 cups fresh strawberries, hulled and sliced
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (240 ml) heavy whipping cream, cold
  • 1/2 cup (60 g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Rinse and hull about 2 cups (300 g) of fresh strawberries. Slice them evenly about 1/4-inch thick and set aside.
  2. In a medium bowl, beat 8 oz (225 g) softened cream cheese with 1/2 cup (60 g) powdered sugar and 1 teaspoon vanilla extract using an electric mixer at medium speed until smooth and creamy, about 3-4 minutes.
  3. In a large chilled bowl, whip 1 cup (240 ml) cold heavy cream on high speed until soft peaks form, about 3-5 minutes. Avoid overbeating.
  4. Gently fold about one-third of the whipped cream into the cream cheese mixture to lighten it, then fold in the remaining whipped cream carefully to keep the mousse airy and soft.
  5. In serving glasses or bowls, layer sliced strawberries and creamy mousse alternately, finishing with a mousse topping.
  6. Cover and refrigerate for at least 2 hours, ideally 4 hours, to let the mousse set and flavors meld. Garnish with a whole strawberry or mint leaf before serving.

Notes

Use full-fat cream cheese and cold heavy cream for best texture. Fold whipped cream gently into the cream cheese mixture to keep mousse airy. Chill for at least 2 hours for best results. Frozen strawberries can be used if thawed and drained. For dairy-free, substitute vegan cream cheese and coconut whipped topping.
