  • 1 teaspoon fresh lemon zest

Instructions

  1. Prepare the Oat Crust (10 minutes): In a bowl, combine rolled oats, almond flour, brown sugar, cinnamon (if using), and salt. Pour in melted butter and stir until evenly moistened and crumbly. Press firmly into the bottom of a lined 8×8 inch pan to form an even layer. Refrigerate for 10 minutes if time allows.
  2. Make the Cheesecake Filling (15 minutes): Beat softened cream cheese with a hand mixer until smooth. Add Greek yogurt, powdered sugar, vanilla extract, and lemon juice. Mix until silky smooth. Pour filling over chilled oat crust and spread evenly. Cover and refrigerate for at least 2 hours until set.
  3. Prepare the Berry Topping (5 minutes): Mix sliced strawberries and blueberries in a bowl. Drizzle with honey or maple syrup if desired, then sprinkle lemon zest. Toss gently to combine. Spread evenly over the set cheesecake layer.
  4. Final Chill and Serve (at least 1 hour): Refrigerate the assembled bars for another hour to meld flavors. Cut into bars with a knife dipped in hot water for clean slices. Serve cold.
