This easy, never-dry slow cooker chicken breast recipe uses just three ingredients and a simple method to deliver tender, juicy chicken every time. Perfect for meal prep, it’s a versatile base for tacos, salads, sandwiches, and more.

  • 1.5 to 2 pounds (680 to 900 grams) boneless, skinless chicken breasts
  • 1/2 cup (120 milliliters) low-sodium chicken broth or stock
  • 1 to 2 tablespoons your favorite seasoning blend (e.g., garlic powder, onion powder, paprika, dried thyme)
  • Salt and black pepper to taste

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and your chosen seasoning blend.
  2. Pour the 1/2 cup of chicken broth into the bottom of your slow cooker. Place the seasoned chicken breasts in a single layer on the bottom. Do not stack them.
  3. Cover the slow cooker with the lid and cook on LOW for 2.5 to 3.5 hours. Do not cook on high. The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part.
  4. Once the chicken is cooked, use tongs to transfer it to a cutting board. Let it rest for 5 to 10 minutes.
  5. After resting, shred the chicken using two forks, or slice it against the grain for larger pieces. If you want finer shreds, use a hand mixer on low speed right in the slow cooker with the remaining juices.

Notes

Do not cook on high heat. Arrange chicken in a single layer without stacking. Use a meat thermometer for best results. Let chicken rest after cooking to redistribute juices. For best flavor, season generously. The chicken tastes even better the next day.
