A quick and satisfying single-serving lasagna made entirely in a microwave-safe mug. Perfect for those nights when you crave comfort food without the time or effort of traditional baking.

  • 2 lasagna noodles (no-boil preferred), broken into small pieces
  • 1/4 cup marinara sauce
  • 2 tablespoons ricotta cheese
  • 3 tablespoons shredded mozzarella cheese
  • 1/4 cup cooked ground beef or Italian sausage (optional)
  • 1 tablespoon grated Parmesan cheese
  • 1 pinch salt
  • 1 pinch black pepper
  • 1/4 teaspoon dried oregano or Italian seasoning (optional)
  • 1 tablespoon water

Instructions

  1. In a small bowl, combine ricotta cheese with a pinch of salt and black pepper. Stir until smooth and set aside.
  2. Break lasagna noodles into small, bite-sized pieces (about 1 inch square).
  3. Spoon 1 tablespoon of marinara sauce into the bottom of a microwave-safe mug (at least 12 ounces). Spread to coat the base.
  4. Add a single layer of broken noodle pieces on top of the sauce. Press down gently. Add 1 tablespoon of water over the noodles.
  5. Spoon half of the ricotta mixture over the noodles. Add 1 tablespoon of cooked meat (if using) and 1 tablespoon of marinara sauce. Sprinkle with a pinch of Italian seasoning.
  6. Add another layer of broken noodles. Press down. Add another tablespoon of water.
  7. Add the remaining ricotta mixture, another tablespoon of meat, and another tablespoon of marinara sauce. Sprinkle with seasoning.
  8. Top with 3 tablespoons of shredded mozzarella and 1 tablespoon of grated Parmesan cheese.
  9. Place the mug on a microwave-safe plate. Microwave on high for 2 to 3 minutes, until cheese is melted and bubbly and noodles are tender. Start checking at 2 minutes.
  10. Let the mug lasagna rest for 1 minute before serving. Handle with a towel or oven mitt as the mug will be hot.

Notes

The water is crucial for creating steam to cook the noodles. Pressing down each layer helps eliminate air pockets. Leave about half an inch of space at the top of the mug to prevent overflow. Let the lasagna rest for 1 minute after microwaving to allow the noodles to finish absorbing moisture and the cheese to set. For vegetarian version, omit meat and add sautéed mushrooms or spinach. For gluten-free, use gluten-free lasagna noodles. For vegan, use plant-based ricotta, mozzarella, and meat crumble.
