A foolproof slow cooker recipe for tender, shredded chicken glazed in a sweet and savory honey garlic sauce, served on toasted mini Hawaiian rolls with melted cheese.

  • 2 to 3 pounds boneless, skinless chicken breasts
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup pure honey
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 4 to 5 cloves fresh garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon toasted sesame oil
  • 1 package (12 rolls) mini Hawaiian rolls
  • 2 tablespoons melted butter
  • Pinch of garlic powder
  • Pinch of parsley
  • 12 slices Provolone or Cheddar cheese

Instructions

  1. In a medium mixing bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, grated ginger, and sesame oil until smooth.
  2. Place chicken breasts in the bottom of a slow cooker. Pour the honey garlic sauce over the chicken, ensuring pieces are coated. Cut large breasts in half if necessary.
  3. Cover and cook on LOW for 4 to 6 hours until chicken reaches 165°F and shreds easily.
  4. Remove chicken and shred using two forks or a hand mixer. Discard any gristle.
  5. Return shredded chicken to the slow cooker and stir into the remaining sauce. Let sit on LOW for 10-15 minutes to absorb flavors.
  6. Preheat oven to 350°F (175°C). In a small bowl, mix melted butter with garlic powder and parsley.
  7. Place rolls in a 9×13 inch baking dish. Brush tops generously with the butter mixture.
  8. Slice rolls in half horizontally. Place one slice of cheese on the bottom half of each roll.
  9. Pile honey garlic chicken high onto the cheese. Top with the other half of the bun.
  10. Bake for 5-7 minutes until cheese is melted and buns are warm and slightly crisp. Serve immediately.

Notes

For a thicker sauce, mix 1 tablespoon cornstarch with 1 tablespoon cold water and stir in during the last 30 minutes of cooking. Chicken thighs can be used instead of breasts, requiring an extra 30-60 minutes of cooking time. Do not freeze assembled sliders; freeze the chicken mixture separately for up to 3 months.
